Even though Paul died before John received the prophecy (Rev 1:3) about the Ephesian Church Age, prophecy includes the revealing of the past and present(John 4:19 & Daniel 2:37-38).  Paul undeniably had the greatest influence on the early church of any Apostle, and it is this influence both before and after the date of this prophecy that marks him as the messenger to the Ephesian Church Age.
